About the producer

Wilton Benítez is a former chemical engineer who specialises in growing and processing diverse varieties. At his farm, Finca Granja Paraíso 92, he has his own microbiology labs, where he experiments with anaerobic fermentations and stabilisation techniques based on sudden temperature changes (thermal shock).

We love this variety for its spiced notes.
